Christmas cookies with “windows”

When the house is full of children’s laughter, joyful shouts and fun, it gives each holiday a special mood, returning us to our childhood. Especially this feeling is exacerbated in anticipation of the New Year, when my parents are with me. So what, that I am 37 years old, in the parental house – I am a child, their daughter. As in my childhood, I still believe in Santa Claus and look forward to gifts on New Year’s Eve, sharing my positive mood with everyone around. And the aroma of freshly baked Christmas cookies, like the finest perfume, opens the door to a fairy tale …

Ingredients:

Christmas cookies:

  • 2 cups of wheat flour
  • 75 g of butter
  • 250 ml of honey
  • 125 g sour cream
  • 1 tsp of a mixture of cinnamon, cardamom, ginger and badin
  • 1/2 tsp of drinking soda, extinguished with lemon juice
  • a pinch of salt
  • 1 egg for lubrication
  • colored lollipops

Glaze:

  • egg white
  • 2 tsp icing sugar

Instruction:

  1. Melt the butter and mix it hot with honey in a bowl. Add sour cream, soda, slaked with lemon juice, a mixture of seasonings. Pour in the flour and knead the soft dough. Cover with a napkin and let rest for 15-20 minutes. Then roll out the dough with a smooth layer 0.7 cm thick.
  2. Using large molds, cut out different shapes from the dough, and then cut smaller holes inside the cookies. Put them on a baking tray, lined with well oiled paper.
  3. Put the lollipops in a bag and smash them with a hammer into small pieces, fill in prepared holes in the cookies. Break toothpick in half and make small holes for the ropes.
  4. Grease cookies with egg and bake for 10-15 minutes in the oven, heated to a temperature of 180C. Remove from the oven. While hot quickly once again pierce the previously made holes for the rope.
  5. When the cookies cool down – they will become hard. They should be removed from the baking tray, when caramel will harden.
  6. Prepare the glaze (or use the purchased one)
    Beat the protein with a whisk and gradually with 1 teaspoon to enter the powdered sugar, sifted through a sieve, whilst continuing to beat. The glaze should be thick enough, but also flowable. You can tint it with a few drops of beet juice or cocoa powder.
  7. Chilled cookies paint with glaze, put a thread in the hole and a Christmas cookies are READY!

Important

  • To prevent the “window” from sticking, the paper on the baking sheet should be well oiled. If all of a sudden it does, just grease the surface of the glued paper with water several times and gently remove the paper. Then flip it face down and put it again in a hot oven for 2 minutes. This will also give a “window” of convexity.
  • For painting it is better to use the purchased glaze in tubes. Home glaze is good enough to cover the surface of the cookies, but with it you need to work quickly, so as not to froze.
